Surprising to folks who don’t live here, and to even many that do, New Mexico is a great place to forage for edible and medicinal mushrooms — from velvet foot on aspens and hedgehog mushrooms on the edges of spruce stands to sun Caesars under oaks and piñons and giant western puffballs in shrublands and urban parks. Prime mushroom season starts after summer monsoons arrive and lasts until the first frost. But spring and even winter can reward you with some tasty fare. And while mushrooms are most plentiful in the high country, grasslands, bosque, and adjacent shrubland habitat also support multiple fungi.

 

In this class, you’ll meet a dozen mushrooms that grow in New Mexico, focusing on identification, food and medicinal uses, folklore, and just a bit of chemistry. You’ll get to sample dried wild mushrooms for use as tea or in soup, stew, or other dishes. These will be available for pick up in Albuquerque and Durango (apologies that we don’t ship).
